The Legend
Braving high seas at the mercy of the elements. Venturing to exotic corners of the Earth at whim. This adventurous family have done the lot, and all in all the name of taste exploration. Yep, taste: the final frontier. An unforgiving peak, its pursuit is rugged and endless. Four generations of intrepid Beaks have scoured the globe, searching for the finest ingredients, the most tantalising spices and the carefully guarded secrets of truly masterful sausage making. This is why the Beak family have come to be known as the True Taste Pioneers.
The Beak family
The Pioneers
Reginald Beak laid the foundations of the taste pioneering tradition when he experienced the sublime smoky flavour of the chorizo sausages on a Spanish expedition in the 1890s. He later perfected his own recipe based on beef, fresh chillies and bacon - a recipe to be passed on for generations to come.
Then Reggie's wife Elsie descovered the taste sensation of fresh tomato and mango salsa with fragant Mexican jalapeños when she fled across border after the San Francisco earthquake of 1906. The Spicy Salsa Sausage was born.
Peter 'Pedro' Beak's adventures in Europe confirmed his passion for true taste pioneering. From Germany he brought Bratwurst sausages; plump, juicy and bursting with bold, beefy flavour.
Reggie, Elsie and Pedro kept pioneering creations as secret family recipes for many years, when they settled in beef loving Argentina to explore home style cooking techniques.
The David Beak Legacy
When David brought the True Taste to Australia over 25 years ago, he brought with him his carefully kept family recipes and years of practice learning to craft and cook the perfect sausage. He had even done a little true taste pioneering himself, following in the footsteps of his ancestors and travelling the world. David has worked on four continents in search of the best techniques and recipes.
The Mr. Beak's sausages enjoyed by Australians today are the culmination of 130 years of exploration and technique. Just like the old family recipes, the are MSG and gluten free and contain no artificial flavours. And what makes them even better is the fresh ingredients including premium beef sourced from local farmers in the Hunter Valley.
The Legend Continues
The legacy that David established in Australia is slowly being inherited by his children. Will and Lucy Beak continue to faithfully recreate the recipes of their forefathers while upholding the spirit of true taste pioneering in their pursuit of new flavour...
